Carrot Cake Smoothie Love!

Seriously, the natural sugar and sunshine in a giant batch of this carrot cake smoothie will open your eyes, fuel a hike, or substitute for a more traditional dessert.  It takes about 30 seconds to make. And, incidentally it is Paleo, SCD and Gluten-Free.

I lack the words to express how delicious this is or how stirringly-amazing the brain-buzz is after a few good sips…!!!

For the Carrot Cake Smoothie (and you can improvise, but this gave me the most cake-like effect!) add the following to a blender:

  • 1 16-oz organic carrot juice
  • 1/3 cup raw pecans
  • 1/2 tsp (a few strong shakes from a spice jar) of ground cinnamon
  • 2 dates (or one, or none if you are cutting down on sugar!)
  • 1 medium frozen banana

And blend it all up!

This really serves two or three people.

I have to admit I drank almost the whole thing in a few minutes the first time, and I don’t recommend it, but it is that good!  xoxo Dana

    I just saw this post and put my spin on it from what I had handy and am so happy I did! I used a handful of organic baby carrots, bout a cup vanilla coconut milk, half a frozen banana and 1/2 tsp of cinnamon, no added sugar. It is so yummy! I blended it all up in my magic bullet 🙂 thanks dana!
