A Glowing Blueberry Smoothie & All About Eating To Power Up Your Immune System!

I am deeply obsessed with magenta. It may have temporarily been crowded out of my closet by red, but I predict it will make a comeback as my birthday approaches.  Magenta is the color that is not really a color- it is the space between the spectrums of red and blue that our mind imagines as magenta.  For this reason, magenta is somewhat extra magical. It’s a color that is made up yet very powerful, very much like we create every bit of our lives!

That said, a magenta smoothie was born out of necessity…as well as wishful, radiant lust for color!   It can help you change your mind, your mood and your immune system.  Also, it is addictively delicious.

I learned from the very inspiring, brilliant and brave Dr. Terry Wahls at this year’s Mind Body Green Revitalize conference about exactly what kind and how much fruit to eat- as well as greens and sulfur foods – to maintain an optimum immune system.

Serious stuff my friends: Dr Wahls was in a wheelchair with progressing MS and when she, as a doctor herself, dove into the research of her own deemed hopeless case, she created a protocol that has returned her to health… and, she believe, can keep you in great health. HERE is her whole, Earth-shattering talk. You really can’t imagine just how profound the effect that three cups each of dark berries and other “deeply colored-all-the-way-through” fruit, three cups of greens and three cups of sulfur foods can have on your whole life— even if you are ostensibly healthy— until you try it!  There’s much more to learn that is best to hear her share, and I really hope that you all can learn her story and her wisdom. 

Needless to say, since Revitalize I have been eating more berries and leaves than I ever thought possible.  The only way to accomplish it well is to blend ap at least one big dose a day as a smoothie.  Considering my lust for magenta, I do this smoothie with everything from frozen bags of mixed berries to fresh blackberries and everything organic that is in season or in the freezer at the market!

Glowing Blueberry Smoothie— and it really does glow!

  • 2 1/2 – 3 cups of blueberries, frozen or fresh
  • 1/2 cup ice and 1/2 cup water if you use fresh berries. 1 cup of water if you use frozen
  • 2 tbs cashew butter (or sunflower seeds, or cashews, or even pecans)
  • 1/4 cup coconut milk if you have it on hand– if not, more ice & water to blend it all will help
  • 1 ripe avocado
  • 1 tbs coconut oil
  • 1 banana

and blend…. watching it all become thrilling shades of purple and pink!
