Grounding Roasted Strawberries & Cream from The Tao of Dana

I feel like I’m deeply & calmly energized after a big, nourishing snack (or the best breakfast!) of roasted strawberries. Add in some coconut cream and you’ve got total Root Chakra energy bliss!

This magnetic summer season, I’m flowing with so many chakra foods to help you to deliciously and deliberately add more balance to your days.

Root Chakra stuff deals with the energy of survival.  This spinning wheel of energy is a power station at the base of your spine.  Think: feeling grounded, secure, present, well-cared-for, having your needs met, loving your home and your life that sits on a solid foundation.

This chakra generally corresponds to red colors (like strawberries), root veggies, and rich, natural foods like seeds (and coconuts!).  The roasting of the berries concentrates their flavor and gives them more of a sense of grounded substance and impact.

Plus: this is just so so good!

To roast strawerries: 

Simply wash two (or more or less) baskets of strawberries (organic for berries is always the best) and slice them in half.

Spread them out on a cookie sheet (lined with parchment paper is the least messy)  and drizzle with a little coconut oil, honey and a sprinkle of sea salt (not much is needed, the lightest drizzle will do) and then toss.

Roast them for 30-45 minutes in a 350 F degree oven.

Let them cool then… devour!

You can put them in a jar in the refrigerator for a few days so you can sprinkle them on everything (ice cream, salads…and coconut cream!)

The whipped coconut cream is simple, too. 

Refrigerate a can of full-fat coconut milk without added guar gum for a few hours at the least. (I use Trader Joe’s Organic).  Stick a mixing bowl in the refrigerator while you’re at it, as it will help the whip if things are chilled.

Open the can of coconut milk and scoop the top layer (the creamy and and solid part) into your mixing bowl.  Add a little honey to taste, a touch of vanilla extract or raw vanilla bean powder to taste, and then whip it all up!  Start on a low speed and build up gradually for the best results 🙂

If it’s not whipping that well (it happens), I stick it in the freezer for 15-20 minutes and keep trying!  If I get a back that doesn’t fully “whip” it’s still delicious as cream in coffee, on grain-free granola and yes, on these roasted berries!
